Brocolli Parantha


Vegetables are so nutritious... So, many wide variety of veggies are available in the stores. The only problem, is how to make these kids eat them. Mine just want to stay away from veggies, and only thing she likes to eat is Macaroni and Cheese. Well, I just can't give Macaroni and Cheese in all meals... So, started making veggies in different ways, which now she not only like it, she eats the whole meal by herself.. And no more, arguments on the dinner table.. Yayyyyy..



Do you know, Broccoli has a lots of Vitamin C and dietary fiber. It also has lots of nutrients, which has a anti cancer properties... I use it all the time in my recipes, but my little kid just do not want to eat these little trees.... They are out of her plate, as soon as she sees them...

So, experimented some options to make her eat Broccoli.. And this is the 1 idea, which is super-duper hit with her...

Yummy delicious Broccoli Parantha..

Ingredients to make a dough - 

  1. Whole Wheat four (Atta) - 2 cups
  2. Salt- 1tsp
  3. Water as required

Ingredients you will need for filling-

  1. Broccoli florets - 4-5 
  2. Garlic Salt - 1/2 tsp ( Can use 2 Garlic cloves minced)
  3. Salt to taste (put 
  4. Black pepper Powder - 1 tsp
  5. Chat Masala - 1/2 tsp

Directions to follow - 

  • Mix Atta with salt.
  • Knead a dough, with minimal amount of water... Little on tighter side but not soft..
  • Cover and leave it for 15-20 minutes.



  •  Meanwhile, grate Broccoli.


  •  Put it in a bowl. Add salt, garlic salt, black pepper powder and chat masala.


  •  Now, take a dough equal to the size of walnut. Press it by palms,and make a hole in center.


  •  Fill the Broccoli filling.


  •  Close it, and again press it between palms.


  • Put the ball in some extra dry flour.


  •  Roll it slowly and with minimum pressure.


  • Heat the pan (Tawa), and then reduce the temperature between low to medium.
  • Roast the Parantha on either side, without oil/ghee.
  • Apply Ghee/oil on both sides, and cook on medium temperature.
  • Cook till it is slightly crunchy on either sides.


  • Enjoy it with Raita/ Dahi wada/ Pickles..

Dal Palak from the left over Dal fry


I have invited few of my friends at dinner, over the weekend.. Made a whole buffet menu... Shahi Paneer, Dal fry, Gobhi fry, Boondi Raita, Jeera Rice, Puri's, chutney, salad and Ice-cream with sprinklers of top. Well, I do understand, when you are making lot of stuffs, the quantity of individual item has to be less.



Other curries, were good but somehow, I made too much of Dal fry... My family do not want repeat the same dal next day, even if I reheat it properly... So, after some hit and trial experiments, I found out that, if I again process the dal in some other way, no one in family says no to it..

Today, was my laundry day, and I complete forgot to do cook lunch... And remembered, when it was time for my kiddo's friends to come... Yes, my kiddo plays everyday with he friends after lunch time... And this duration sometimes extends to 3-4 hours.. So, the lunch has to be filling and appropriate in all respects... Was only left with 30 minutes time... So, thought of processing this Dal fry on one side, and cook rice on another side....

Had no time to cook veggies, so thought of adding Spinach to this dal itself... It was so quick, 10 minutes, and the dal was ready... In 20 minutes, she was on her Lunch table... And dal was just awesome... Now, Next time I am making Chana Dal, I will make sure that I have extra,to prepare Dal-Palak, next day...


Here, is the recipe for awesome Dal- Palak for you to try -

Ingredients for 4 people -

  1. Cooked Dal for 3 people 
  2. Zeera - 1 tsp
  3. Garlic cloves - 3-4
  4. Green Chilli - 2 (slited)
  5. Spinach - 25-30 leaves (roughly chopped) 
  6. Salt - 1/4 tsp (as per taste)
  7. Aamchur Powder - 1 tsp
  8. Home made Ghee - 1 tbsp
Direction to follow-
  • Heat Ghee, add zeera, let it crackle.

  • Add garlic cloves and green chilli, and saute till cloves are light brown.

  • Add chopped spinach, and fry on high flame, till all water dries up.

  • Now, add dal with a cup of water. Stir, and add salt with chat masala.
  • Stir and give it a boil for 5 minutes, and it is done..

  • Enjoy...

Mango Cake Cookie Bowl #CreativeCookieExchange

Every year in summer, Mango becomes part of our daily meal... We prepare lots of dessert from Mango like Mango custard, mango cake, Mango mousse.... These 3 things are absolutely adored by my kiddo... it's always my first preference to make...



So, while, I was deciding what to make for Cookies and Icecream event, I made Mango cake for the dessert.. The moment it came out, this idea stricked me of making cookie out of it... I always love to do experiment with my cooking, and when I succeed,it gives me immense happiness. 

This idea came to me, as I love to have my slice of cake topped with a dulloop of iceceam, some bananas or Mango's and crushed almonds... So, this idea was looking quite interesting to me...



My oven, was already hot that time, so mashed 2 slices of cake, and baked at high temperature, to make it hard...And it worked out just fine... The crunchiness and butter goodness, mixed with the flavor of ice- cream, took my heart away.. While I am writing this, I have again started craving for this delicious dessert... Meanwhile, I will go and have 1 more cookie bowl filled with Mango
ice-cream, you guys can read further.

Ingredients you need to follow to make 6 Cookie Bowls- 
  1. Mango Cake or Any cake - 2 big slices
  2. Unsalted Butter - 2 tbsp
Directions to follow -
  • Mash the cake, mix butter, and let it cool down a bit.. (If your cake is cold, heat it in a microwave safe bowl for 2 minutes, then proceed as written)
  • Line the cupcake liner in a cupcake pan, grease it..
  • Take a cake of size equal to walnut, and press it in the cupcake liner, and make a thin layer of it around the liner...


  • Now, bake at 520 degrees for 5-7 minutes, at lower rack, till the edges starts turning light brown..
  • Take out of pan, and let it rest... 
  • Remove the liner from the cookie bowl, when it is still little warm...
  • Now, serve it with 2 scoops of icecream, topped with sliced Mangoes on top.

Eggless Mango Almond Bundt Cake #BundtBakers

Yesterday, was my daughter's b'day... We typically celebrate her birthday for about a week... Mostly, doing whatever she likes us to do... Trying to make her happy in every way..  She wanted a Vanilla cake for her birthday... Since, I have lots of friends who do not eat eggs, so I decided to make eggless cake...



Now, I wanted to make something for her last week..  She loves Mango, so thought this will go perfect with this month's theme too.. I have never tried something like this before, so didn't know how is it going to work.. I used Mango chunks in this cake... It took little more time to bake than usual, because of the juice Mango was releasing when it was baking... But, overall I loved the taste.. It was so yum, nobody in my family, allowed me to frost it... Whatever photos, I am posting is taken during the process of cooling....

    So, sharing my easy-peasy recipe of Eggless Mango Almond Bundt Cake - 

    Ingredients you require - 
    1. All Purpose flour - 2 cups
    2. Baking Powder - 1tbsp
    3. Baking Soda - 1 tsp
    4. Cardamom Powder - 1 tsp
    5. Sugar - 3/4 cup
    6. Butter (unsalted) - 1/2 cup
    7. Olive Oil  -1/2 cup
    8. Mango Chunks- 1/2 Mango
    9. Mango Puree - 1/2 Mango
    10. Broken Almond - 1/2 cup +1/2 cup
    11. Yogurt- 2tbsp

    Directions to follow - 
    • Sift All Purpose flour and mix with baking soda, baking powder and Cardamom powder.
    • Add Mango Puree in the flour mixture.

    •  Mix and add melted butter, olive oil and yogurt, one by one.. Keep stirring in between.
    • In the last, add broken almonds, and mix.


    •  Now, add Mango chunks, mix.
    • Time to make the Bundt Pan ready.. 
    • Spray Oil in a pan. n the bottom make a layer of 1/4 cup of Almonds.


    • Now, spoon the batter in the pan carefully, and not disturbing the almond spread.
    • Let it rest for 5 minutes... Meanwhile, preheat the oven.

    • Bake at 350 degrees for 45 minutes, or till it passes the toothpick test.. It might can more time from the usual cakes, because of Mango chunks... But, in the end, the cake was very flavorful with the taste of Mango in every bite..

    Oats Garlic Kulcha #BreadBakers


    Oatmeal is one of my favorite breakfast... Traditional rolled Oats boiled in microwave in water, sufficient enough to soak Oats, with a dash of cold milk and 4-5 tbsp of Honey Bunches of Oats sprinkled on top... Yummmm... But, my problem is, even after knowing benefits of Oats, my hubby just avoid eating them.. So, was thinking of how to include Oats in his daily meal.. And then, this month's event of bread baking, made me thinking, and then I knew what exactly I need to do..


    This idea is completely mine... So, thought of experimenting and see, how does it work.. And, I am really very-very happy to share that it was too yumm, and super-duper hit at my home... It was soft, as well as chewy at the same time...

    Oatmeal Bread themed #BreadBakers:

    Ingredients you will need to make 10 Kulcha's- 
    1. All Purpose flour - 3 cups + 1 cup( as needed)
    2. Rolled Oats - 1 cup
    3. Rapid Rise Yeast - 1 Packet
    4. Sugar - 1tbsp
    5. Salt to taste
    6. Garlic Salt to sprinkle
    7. Spring onions - 2 (diced)
    8. Garlic- 2 cloves (minced)
    9. Shredded cheese- 1/4 cup
    Directions to follow - 
    • Put Oats in a bowl, with water  completely covering it... Microwave it for 2 minutes, and leave it in microwave for 5 minutes.



    • In a glass cup, warm the water.. Add sugar and yeast, mix and let it proof for 10 minutes.
    • In a big vessel, take 2 cups of All Purpose flour, 1tsp of salt, oats, and yeast mixture.




    • Mix it with wooden spatula, sprayed with Olive Oil... This mixture is going to be sticky..
    • Spray Oil above it and keep it in warm place for about an hour...


    •  This is how it looks after an hour.





    • Transfer the dough on the working floured top. Again knead the dough, and keep on adding flour as required. The dough should be pliable, but not sticky.
    • Take the walnut size of dough, and spread it by pressing it by both thumbs. (I prefer to spread the dough on parchment paper as it is easy to handle).
    • Sprinkle some Garlic Salt, minced Garlic, shredded cheese and chopped Spring Onions on top. 
    • Keep inside the preheated oven for 10 minutes.


  • Turn and again cook it for 2 minutes, on broil.
  • Enjoy it hot with any curry. I made Choley, and it was too yumm.

    Shahi Soya Appe

    I got this Appe Pan, after a big thought... Saw so many posts in facebook groups, of Appe-Pan using less oil. .Though the idea, was very appealingfor me, but I wante to get this product from India.. When, my hubby went to India, unfortunately he didnot get this amazing Pan for me.. And, somehow, the Indian stores also stopped carrying them... Then, I thought of searching all stores in Bay Area.. And I got this Pan, in Coconut Hill.. Now, I completely agree with my friends, who says this pan gives an amazingly delicious food.


    I have been on spree of eating healthy in last few days... I have tried many dishes, few of them set exactly on my taste buds, and Shahi Soya Appe is one of them.... It is very easy to make, full of protein but too delicious to eat.. Even, my kiddo couldn't stop herself in 1... Preparation time needed only for boiling 1 Potato and chopping some onions, and you are done.... Made it for a friend coming over to my place, and was very happy to see her enjoying this yummy snack.

    If you do not have Appe Pan, then also you can make crunchy snack, by pan frying it if you are looking for less oil, otherwise deep frying is also a good option.. And, I am really happy to explore this option of giving these to my Kiddo at her school lunch time.. It stays crunchy even after getting cold... One only has to take care, of not packing them hot...

    So, presenting to you today, Shahi Soya Appe..


    Ingredients you will need for outer covering-

    1. Soya granules- 1cup
    2. Bread - 3 (broken by fingers)
    3. Potato (big) - 1
    4. Salt to taste
    5. Zeera Powder - 1tsp
    6. Red Chilli Powder - 1/2 tsp (This much will make it mild spicy, add more if you want it more spicy)
    7. Aamchur Powder - 1 tsp
    8. Black Pepper Powder - 1tsp
    9. Bread Crumbs- 1cup
    10. Oil as needed
    Ingredients you will need for filling - 
    1. Paneer - 1 cup (grated)
    2. Salt to taste
    3. Aamchur powder - 1tsp
    4. Red Chilli Powder - 1/2t tsp
    5. Cashew-  1/2 cup
    6. Red Onions (chopped) - 1/2 cup


      Directions to follow - 
      • Boil Soya Granules for 5 minutes, and let it cool down.

      •  In another bowl, take boiled potato and bread, and mash them.


      •  Drain the water of Soya granules, and add it to the Potato mixture. Also add, all the spices at this time.


      •  Knead it well.


      •  In another bowl, take Paneer. Add Salt, Red Chili Powder and Aamchur Powder.

      • Knead Paneer and add Cashew in the mixture.


      •  Add chopped Onion.


      •  Take a Walnut size ball from Potato mixture, and make a hole in the center like this.


      •  Fill the Paneer mixture in the center.


      •  Cover it carefully, and place it on bread crumbs.


      •  Cover it complete;y by bread crumbs.


      •  Repeat the same for all Potato and Paneer mixture.


      • At this point, if you do not have appe pan, you can deep fry them, or pan fry them by keep on rotating.
      • Heat the Appe pan, coat it with oil.


      • After every 5 minutes, rotate to make it crisp on all sides. Keep on adding drop of oils, as required.
      • Yummy, delicious, crunchy Shahi Soya Appe is ready.. Enjoy it hot, with dip of your choice.
