KitKat Surprise Bundt Cake [eggless]


I was visualizing my Surprise Bundt from last 2 months.... And I wanted it something to be like this...

Hiding a name or shape, was not workable in my family... Hiding M&M's could have worked, but then it will melt while baking... So, after giving a good thought, I decided to add Kitkat as a surprise, as it is one of those chocolates, which is loved by everyone in my family... Was all set to frost my Vanilla Bundt, and when it cooled down, sliced the bundt horizontally and filled the middle layer from Chocolate Ganache and Kitkat... Till now, everything  was going as planned... And, when I picked the top part of Bundt, don't know how, it went down, down and down on the floor, and was broken into 4 big pieces, and millions of small pieces... I still went ahead and picked up all the 4 big pieces, and tried to hide all the niches by Chocoltae Ganache... But, was not at all happy with all the photo I took... Though my Kiddo and her friends, loved the surprise, as well as the cake, as it was soft and moist... 

I prefer mostly to make eggless cakes, as one of my dear friend is allergic to eggs...  And from my experience, I can say, moist and delicious cakes can be made without eggs too...



So, decided to make another Suprise cake... This  time I hided the Kitkat inside the batter... I didnot wanted it to lose it's shape, so I kept the Kitkat in a freezer for 4-5 hours... It's a regular blackforest cake, with the Kitkat hidden in the center....

Ingredients you need to make a cake - 
  1. All Purpose flour - 1 cup
  2. Wheat flour - 1/2 cup
  3. Baking soda - 1 tsp
  4. Baking powder - 1tbsp
  5. Butter - 2tbsp
  6. Cooking Oil - 1/2 cup
  7. Yogurt - 1/2 cup
  8. Cocoa Powder - 2 tbsp
  9. Banana - 1
  10. Kitkat - 10-12 single pieces [frozen]
Ingredients needed for Chocolate Ganache - 
  1. Unsweetened Chocolate - 1 cup
  2. Heavy Whipping Cream - 1 cup

Directions to follow to make a cake- 
  • Mix all the dry ingredients, except Kitkat.
  • Mix all the wet ingredients.
  • Slowly, pour dry ingredients in wet ingredients, and mix.
  • Spoon the batter in a ready Bundt pan, and when the bottom layer of pan is covered with batter, place the individual kitkat in the center.

  • Now, carefully without disturbing Kitkat's, spoon rest of the batter in the pan and make sure Kitkat is completely covered.

  • Bake for 35 minutes.
  • Remove the pan from oven, and let it cool down for about 2-3 hours.


Directions to make a Chocolate Ganache - 
  • In a medium size bowl, take 1 cup of unsweetened Chocolate, and pour hot chocolate over it.
  • Stir, until all the Chocolate is dissolved.
  • While, it's still hot pour on the Bundt, and lat it set for another 2 hours.
  • After 2 hours, just cut and serve...
  • Goes perfectly with a scoop of Vanilla Icecream....

Tsoureki (Greek Easter Bread) #BreadBakers

Life is sometimes so unpredictable. 2 weeks back, when my Kiddo's school was closing for a Spring Break, I was quite happy... I thought I will get more time, and will explore more in different cuisines.. But, things never actually happen the way you want them too..

2 days of Spring break, was awesome.. And then, came the most dreaded days and nights for me and my Kiddo. She was already having cold, but then she was ok, and all the symptoms says it's a regular cold and cough. I was doing everything I could do to give her relief, but then suddenly on 3rd day, her fever started and she became dull... I called up on my Insurance Nurseline, they scared me, and asked me to take her to Urgent Care... Those first 3 days of her illness, was too scary... And slowly, she started coming back to herself again... My plans of all the cooking, went into vain, as I was completely concentrating on her.... Frankly speaking, I was too worried for her, to think about cooking... Well, time passed and she is doing fine now... Heard a saying, long time back, "All's well, if it ends well". And here we are, making, baking and cooking again.


Since, she was recovering, I wanted to make something which suits her taste buds... So, all the internet searching for this event, which also suits her taste bud, narrowed my search to this awesome bread- Tsoureki [Greek Easter bread]. While researching, I stumbled across this awesome recipe of Tsoureki by chow.com. I did some changes according to my requirement and ingredients available in my pantry. Well, I am happy, it turn out to be delicious.

Tsoureki is a bread, made by people of Greek's in Easter. It is basically made sweet, and is eaten after main meal, in the form of dessert. It is a braided, sweet, egg- enriched bread, and has roots in western and central asia. [ Got this information from Wikipedia]

So, here is my recipe for the delicious Tsoureki bread -



Ingredients you will need-
  1. Milk - 3/4 cup
  2. Yeast - 1 packet [ 2 1/2 tsp]
  3. All Purpose Flour- 4 cups
  4. Granulated Sugar - 3/4 cup
  5. Salt- 1tsp
  6. Butter - 8 tbsp+ 2tbsp
  7. Eggs - 2 + 1 egg white
  8. Orange [Clementine] - 1 [zest and juice]
  9. Cinnamon Powder - 1tsp
  10. Broken almonds - 2tbsp
Directions to follow - 
  • Warm Milk and sprinkle yeast, on it, stir and let it sit for about  minutes.
  • In another bowl, mix All Purpose Flour with Sugar, salt, zest of clementine and Cinnamon powder.
  • In a 3rd bowl, beat eggs.. Melt butter in a microwave and mix it with eggs.
  • Pour egg mixture to the milk mixture, and mix till blended.
  • Little by little add flour mixture to the egg mixture.
  • A tight dough will start to form.
  • Add clementine juice to the dough,  and knead.
  • Transfer the dough on floured surface, and knead it for 5 minutes.
  • Spray oil on the dough, and cover it with  a warm kitchen towel, and leave it in a warm place for 2 hours, and let it rise.
  • After 2 hours, add 2 tbsp of melted butter and knead the dough, till it becomes soft.
  • Now, divide the whole dough in 3 parts, and roll all of them in a long strand.

  • Join all 3 of them, from 1 end, and pinch them together, and press them inside towards down. I like to do on the wrapper of butter, as it works as a nice parchment paper.

  • Start braiding.

  • When reaching end, again pinch all the strands together and push them inside to give a finish look.

  • Put it again in the warm place, and let it rise for 30-35 minutes.
  • Brush it with an egg white.
  • Press all the almonds decoratively on the dough.

  • Bake it for 30 minutes, at 350 degrees in a preheated oven.
  • Once out of oven, brush it with a butter.

  • Slice and enjoy it warm, topped with a layer of whipped cream and honey drizzle all over it.
  • Yummm, I am again hungry.

Petoskey and Pine Giveaway

Hello everyone,

Today I have something else to talk about than the food. Dozen of baker's were joined to give the review of an excellent product of Petoskey and Pine. I am glad, I got an opportunity to try their product for free and give the review...


I am one of those people, who have extra dry skin.. And I have tried all type of bath soaps.. Only thing which worked out for me is Dove's Extra Moisturized body wash.. But, then it also fails when the weather is in extreme condition... So, I selected a product to review, which has extra oil in it, "Mint Flower"... So, I am very delighted to say, it stand completely to my expectation...  No more dry skin..

My daughter is down with cold and fever... Doc says it's an early sign of Pneumonia...... She is taking all medications... All antibiotics... Fever and Antibiotics makes, the skin dry.. Her lips also, got too dried.. I was putting Vaseline on her lips, frequently(every 2 hrs), but it wasn't working, as the lips gets dry too fast... So, when I got my Packet, I tried this Lip Balm on her... Well, it's almost 24 hrs now, and we have just used the lip balm twice, and her lips is again back to normal...
