Mushroom-Paneer Biryani (Mushroom- Tofu fried Rice)

Do you know, all the vegetables and fruits we eat, have some benefits to our body. I always keep on trying new dishes, which is nutritious and have some benefit to us.

Mushroom helps us in lowering cholesterol levels, prevents from breast cancer and prostate cancer, an ideal low energy diet for diabetic patients, helps to increase the immunity, helps those who are more interested in weight loss ( has lean protein and good amount of fiber), Mushroom is the only vegetable which contains edible Vitamin-D, it is also a good source of calcium (good for bones), iron (benefits in anemia), potassium (very good for lowering blood pressure), copper (anti bacterial) and selenium (very good for health of bones, teeth, nails, hair and as an anti oxidant).

Paneer is a product made from Milk. Tofu can also be used as a substitute to Paneer. Paneer helps in reducing weight, provides protein, protect against cancer, prevent stomach disorders, provides calcium and helps against brittle bones.

This preparation of Rice is very simple, nutritious, healthy, yummy and is also quite presentable, if you want to make it for your family and friends. You can make it a main course and have it with raita ( an yogurt preparation). Can also be consumed with curry and lentils.

Preparation Time - 10 minutes

Cooking Time - 20-30 minutes

Ingredients for 4 People -

  1. Mushroom - 1 small cup (sliced)
  2. Paneer/Tofu- 1 small cup (diced)
  3. Onion - 1/2 ( sliced- big)
  4. Salt to taste
  5. Turmeric Powder - 1/2 tsp
  6. Cumin Powder - 1tsp
  7. Rice - 8 handful or 2 big cups
  8. Cumin seeds- 1/4 tsp
  9. Cloves - 2
  10. Cardamom - 2 full
  11. Bay leaf ( tez patta) - 2 leaves
  12. Black Cardamom - 1
  13. Cooking Oil - 1 tbsp
  14. Butter - 1/2 tsp

Preparation - 


  •  In a pan/pressure cooker, heat cooking Oil, fry the pieces of Paneer/tofu till it turns golden brown in all sides of Paneer/tofu. Drain oil and transfer pieces of  Paneer in a different vessel and add cumin seeds, Bay leaf, Black Cardamom and Cloves to the remaining oil in a pan/cooker, fry it for 2 minutes, stirring continously.
  • Add sliced Onion and stir, till it turns light brown in color.
  • Add mushroom and rice, with salt and turmeric powder, stir and keep it on medium flame, close the lid of pan.
  • Let it get cooked for 1 whistle.
  • Remove it from the flame and let it cool down.
  • Open the lid, when pressure is released.
  • Add melted butter to the prepared rice from the top. Mix it with a light hand, so that rice doesn't break.
  • In a serving bowl, add a layer of cooked rice , then 4-5 pieces of Paneer/tofu, then again a layer of rice with a layer of Paneer. Keep on repeating till all the rice is transferred to the serving bowl. 
  • Add all the leftover Paneer from the top.
  • Serve it hot.
