Mashed Potato ( Aloo ka bharta)

Ingredients -
  1. Potato -3 ( whole)
  2. Onions - 1/4 ( Chopped)
  3. Green chilli - 1 ( chopped)
  4. Olive Oil- 1tsp


Directions -
  • Boil Potatoes. Peel of the skin.
  • Mash it in a bowl. Add chopped potatoes and green chilli with salt. Mix them properly.
  • Add a spoon of oil and mix it properly.
  • Enjoy it with Rice and lentil.

Vegetable Fried Rice

Ingredients-
  1. Rice - 4 handful
  2. Onion - 1 cup ( sliced)
  3. Cabbage - 1/2 cup (chopped)
  4. Carrot- 1 (Grated)
  5. Bell Pepper - 1/2 cup ( cut in small pieces)
  6. Peas - 1 Handful
  7. Mushroom - 1/2 Cup
  8. Almonds- 10-12 (crushed-to garnish)
  9. Pistachios - 10-12 (to garnish)
  10. Salt to taste
  11. Oil - 1tsp
  12. White Vinegar - 2tbsp
Directions - 
  • Wash rice and cook it in an open pan, till the rice is tender. Drain the water, add cold water and drain the water.
  • In a big pan, add oil and let it get heated. add onions and fry it till it turns brown.
  • Now, add all vegetables with salt and white vinegar, cook it for 15 minutes, covered.
  • When the vegetables are cooked, add cooked white rice in pan.
  • Mix it properly. Garnish it with crushed almonds and pistachios .
  • Serve it hot with vegetable manchurian.

Eggplant round fried ( baigain gol)

Ingredients-
  1. Eggplant- 1
  2. Garlic- 4-5 cloves
  3. Salt to taste
  4. Turmeric Powder- 1/2 tsp
  5. Red Chilli powder- 1/2 tsp
  6. Cumin Powder- 1/2 tsp
  7. Rice - 1 handful
Directions- 
  • Soak rice in water for 1 hour.
  • Grind it after 1 hour.
  • Cut Eggplant in rounds.
  • Make a paste of garlic and ginger with grinded rice, salt, turmeric powder, cumin powder and red chilli powder.
  • Soak eggplant rounds in this paste.
  • Take a pan, sprinkle oil in a pan, on medium flame add these eggplant rounds, cook it for 10 minutes on each side.
  • Serve it hot. Enjoy it with tortilla.

Cauliflower Manchurian (Gobhi Manchurian)

Ingredients-
  1. Cauliflower ( Gobhi)- 10-12 pieces
  2. All purpose flour- 2tbsp
  3. Cornflour - 1 tsp
  4. Salt to taste
  5. Red Chilli flakes - 1tsp
  6. Soya Sauce- 4 tbsp
  7. Tomato Sauce - 2 tbsp
  8. Green Chilli Sauce- 1 tbsp (Optional)
  9. Water as required
  10. Oil - 1 bowl ( for frying)
  11. Garlic- 3-4 cloves ( chopped)
Directions - 

  • Boil Cauliflower on a high flame in an open pan for 5 minutes.
  • Mix all purpose flour and cornflour together with a 2tbsp(as required) of water, to make a paste (similar to paste of a cake).
  • Add salt and the boiled cauliflower in a paste.
  • Cover cauliflower with the paste.
  • Heat Oil in a Pan, Fry cauliflower till it turns brown.
  • In another Pan, fry chopped garlic and chopped green onions. 
  • Mix Soya sauce, green chilli sauce and tomato sauce with a spoon of all purpose flour in a bowl with a glass of water.
  • Transfer this mix to the pan in which onion and garlic is getting fried up.
  • Close the lid and let it get cooked for 10 minutes.
  • After it is done, close the flame and let it cool down for 10 minutes, keep fried cauliflower in a serving dish, now add soya mixture and close the lid of serving dish.
  • Garnish it with chopped cilantro.
  • Enjoy it with fried rice. Serve it hot.
